We are pleased to offer Apple Cider and Orange Juice from Barsotti Juice Company. Barsotti History: The Barsotti family moved to Apple Hill in 1976 to farm quality apples and pears. After a request from Raley’s to provide fresh cider to their stores, Barsotti shifted from an apple-packing operation to a wholesale cider and juice operation. The Barsotti family understands the importance of using the perfect combination of apple varieties to get the perfect blend of sweet and tart flavors. The Barsotti Difference: Barsotti’s presses a special blend of fresh apples from California and Washington. Their favorite varieties to juice include Golden Delicious, Fuji, Granny Smith, Gala, Gravenstein, McIntosh, Mutsu, Red Delicious, and Pink Lady. It takes roughly 12 pounds of apples to produce one gallon of fresh juice. Their juices are Flash Pasteurized (FP)– a method of heat pasteurization that doesn’t compromise taste and quality.

Apple Cider vs. Apple Juice: Barsotti uses the terms ‘cider’ and ‘juice’ interchangeably, changing their label depending on the season (cider in the fall and juice the rest of the year). Apple cider is freshly pressed, not-from-concentrate juice. Cider is also pasteurized but still perishable and therefore must be refrigerated. Commercial apple juice is usually from concentrate and has been filtered, pasteurized, and vacuum sealed to give a longer shelf life. We also offer Barsotti Orange Juice– a blend of freshly squeezed orange varieties, never from concentrate. Available by the gallon.

Produce Express offers a variety of nut oils from La Tourangelle Artisan Oils, including an incredible Toasted Pumpkin Seed Oil. La Tourangelle handcrafts their pumpkin seed oil, slowly roasting the seeds to perfection. This oil adds a rich, nutty taste to salad dressing, and is delicious drizzled in pasta, soup, marinades, or spreads. It is not used for cooking, since it can become bitter when heated. Available by the 250ml.

In addition to their pumpkin seed oil, we are pleased to offer the following artisan nut oils: Grapeseed Oil (gallon), Roasted Walnut Oil (gallon), Roasted Almond Oil (liter), Roasted Hazelnut Oil (liter), Avocado Oil (liter), and Sesame Oil (liter). La Tourangelle Nut Oils are made using a 150 year-old traditional French method of roasting and extracting the oil from nuts gathered by local farmers. In 2002, a small French artisan oil maker sent his son to California to expand their nut oils internationally. The new oil mill in Woodland, California, produces oil from nuts grown in the fertile Central Valley of California. The highest quality nuts are carefully selected, hand roasted in cast iron pots, mechanically pressed and lightly filtered. These elegant oils each have their own unique flavors. Enjoy!

Our Fall Farmer’s Market is back! Join us on Wednesday, October 25 from 10am-1pm to celebrate the seasonal bounty from dozens of local farmers and producers. Local chefs will be teamed with a local farm or specialty purveyor to create bites that highlight the heavy hitters of fall. MAC Knives (a big hit at the summer market) will be back with more $100 gift certificates to raffle off every hour! This is a great opportunity to support our local farmers, to see and taste the bounty of the season, and to talk to the hard working farmers who grew it! The Farmer’s Market is open to any and all restaurant employees. We hope you take advantage of this great opportunity, and encourage your staff, to learn more about the ingredients that you prepare and serve daily. This event is also a great opportunity to see what your fellow chefs around town are up to. We look forward to seeing you there!
