Celery
Celery - Good-quality celery should have even-colored, unblemished and smoothed-skinned stalks. Leaves should be fresh with no signs of wilting. Contrary to popular belief, light green stalks taste better than those that are dark green.

Celery Root - A turnip-like root vegetable that has a flavor similar to strong celery combined with parsley. Unlike celery, it must be peeled before it is prepared. Harvested when it reaches 2 pounds or less, the smaller roots are better than larger ones, which can be woody and hollow.
