Cauliflower
Cauliflower - Good-quality cauliflower will have white or slightly off-white heads that are firm with no space between the curds. The leaves should be fresh and green. There is no quality difference between large and small
heads.

Broccoflower - A vegetable that is a cross between broccoli and cauliflower. Its appearance is the same as a cauliflower except it is light, bright green in color. It has a slightly sweeter taste than regular cauliflower when eaten raw and when cooked, its taste is similar to broccoli.

Purple Cauliflower - This variety of cauliflower has a purple colored curd rather than white as on regular cauliflower. It cooks faster than white cauliflower and has a little milder taste. When cooked, its color changes from purple to green.

Broccoli Romanesco - This relative of the broccoli and cauliflower family grows as a lime green colored head having an appearance somewhat similar to cauliflower except for the cone-shaped florets that swirl upward forming
peaks.
