Wild Mushrooms, Truffle
Oil
Just as we thought that the season for Chanterelle
mushrooms was about to end, a healthy crop of California
Chanterelles has appeared and this week we are able to
offer a variety of foraged wild mushrooms. Chanterelles
often become susceptible to winter weather at this time
of year and arrive overgrown and soggy and they are then
replaced by whatever varieties are next in succession.
In addition to California Chanterelles, we are now
stocking three more varieties of wild mushrooms, all
from the Pacific Northwest:
Hedgehogs-While not quite as flavorful or
fragrant, hedgehogs are the most common replacement for
chanterelles. Golden in color with small stems and
even sized caps, hedgehogs arrive dry, firm and clean
and ready to braise, roast or sauté.

Black Trumpets-These mushrooms are often called
black chanterelles as they are often considered part of
the larger family. However, trumpets are distinct
in color, shape, size and texture from their chanterelle
‘cousins’. Trumpets are gray to black in color,
shaped like irregular petunias and have thin flesh that
is somewhat ‘droopy’. Black trumpets have deep
flavor that is often described as ‘smoky’ and
‘tea-like’.

Yellow foot Chanterelles-Again, another relative
that appears after the demise of the golden chanterelle.
Most appear as small, delicate mushrooms with tender
stems and caps. Sweet-savory flavor.

East Coast Demand
The “freezes” that have hit
Florida for the last two weeks have
made national headlines. Many stories have been reported
and written about the potential damage to the citrus crop
and rightly so.
Florida accounts for about 40 percent
of our nations citrus fruit. What has received little or
no attention is
Florida’s other crops. This time
of year Florida typically supplies the entire east coast
with many staples such as strawberries, tomatoes, green
bell peppers, Italian squash, yellow squash, eggplant and
green beans. The freezes and their prolonged duration have
devastated and destroyed the entire
Florida region. Demand for many
of these items has switched to
Mexico.
Mexico has also experienced
poor weather and adverse growing conditions. Markets will
be very strong on most of these items for the next 60 days
or so.

Clover Stornetta Farms
The Clover dairy brand began in
the 1900’s when the Petaluma Cooperative Creamery began
distribution in
Sonoma and Marin counties.
A large fire destroyed the Petaluma
plant in 1975 and the company re-emerged as Clover
Stornetta in 1977 and opened a new state-of-the art
facility in 1991 and has steadily increased distribution
throughout
California.
