Mixed Root Vegetables

Root vegetables are underground plant parts that comprise a substantial part of year round vegetable crops. They are called root vegetables for lack of a better generic term. Consider the list of vegetables pulled from below ground; potatoes, onions, carrots, beets, sweet potatoes and yams, turnips, garlic and many more. Root vegetables traditionally form the staple of our winter crops and are used throughout all aspects of restaurant menus-salads, soups, entrees, stews and as substantial side dishes. Most people are familiar with the more common root vegetables like potatoes, carrots, onions and aren't as knowledgeable about the not so glamorous ones, namely turnips, rutabagas and parsnips. These root vegetables are often referred to as lowly vegetables, not so much because of there location in the ground, but rather of their overall status in the vegetable kingdom. Root vegetables have recently enjoyed a renaissance of sorts and their extensive use in restaurants has resulted in a demand for these vegetables at various stages in their growth as well as additional varietal types. As such, ‘teenage', ‘baby' and mixed roots are available throughout the year. High in essential vitamins and dietary fiber and rich in flavor, we offer the following for your holiday menus.
