PRODUCT OF THE WEEK

SCIABICA OLIVE OIL

Native to the Mediterranean region, the use of olives and olive oil dates back to 6,000 B.C. The pressing of tree-ripened olives yields a healthy, flavorful oil recognized and used around the globe. The flavor, color and fragrance of olive oil can vary dramatically depending on the growing region, soil condition, variety of olive used and, most importantly, the method used to produce the oil. The best olive oils are cold pressed, a chemical free process that uses only natural pressure to extract oil from the olives. Extra Virgin Olive Oil , considered the finest type of olive oil, is the result of the cold pressed method. Other types of olive oil include, Virgin, Pure, Refined and Pomace, the latter three extracted by the use of chemicals and heat, resulting in more neutral flavored oils. The most common oil used is the Pure type, a blend of refined and Extra Virgin Olive Oils. The beneficial health effects of olive oil are due to the high concentration of monounsaturated fats, antioxidants and vitamin E. Pure olive oil should be used when cooking with heat-saute, roasting and baking. Extra Virgin is best saved for salads and vinaigrettes or brushed directly onto cooked vegetables, fish and meat. Produce Express stocks Sciabica Extra Virgin and Pure Olive Oil year round.

Pack size: 4/1 gallon case or by the gallon.

HEALTH & SAFETY ISSUES

The highest concentration of healthy monounsaturated fats is found in Extra Virgin Olive Oil. The method of extraction, cold pressing, produces the greatest amount of oleic acid, the most beneficial of these types of fats.
