Gina Marie cream cheese is made with three ingredients-fresh milk, cream and sea salt. Like the other cheeses from Sierra Nevada, no stabilizers are used, nor gums, fillers or animal rennet. The result is a fresh tasting cream cheese with a lighter texture and creamy flavor.

Cheese is often grouped by the type of milk used-cow, goat or sheep-but it may be more useful for cooking purposes to categorize by the length of aging and their final texture. When doing so, the words most often used include fresh, soft-ripened, semisoft, firm and blue. Cream cheese is a fresh cheese-meaning not aged at all. Since aging creates flavor, fresh cheeses are among the mildest. They most closely resemble the original character and the flavor of the milk from which they were made. For instance, goat's milk imparts a tartness, while cow's milk is mild. The texture is usually smooth and easily spreadable.
