Micro Greens, Herb Flowers and Edible Flowers

2MicroGreens are a tiny form of edible greens produced from the seeds of vegetables, herbs or other plants. They range in size from one to two inches long, including the stem and leaves. MicroGreens can have surprisingly intense flavors considering their small size, though not as strong as the mature greens and herbs. A MicroGreen consists of a central stem, two small leaves and usually one pair of the plant's true leaves. The seeds are the same seeds used to grow the full sized herbs, vegetables and greens. Thus, MicroGreens are simply seedlings that are harvested before they develop into larger plants. MicroGreens are not sprouts. Sprouts are simply germinated seeds, grown entirely in water in an environment of high moisture and humidity and harvested within 2-3 days, root and all. MicroGreens are mostly greenhouse grown, planted in specific soil mixes or a soil substitute such as peat moss in high light conditions with low air humidity and good air circulation. Most varieties require 1-2 weeks growing time, some as long as 4-6 weeks. When ready to harvest, they are cut above the soil surface and packed without any root.




MicroGreens are used primarily as a garnish and flavor accent. They may also be lightly mixed into salads


Fresh Origins owner, David Sasuga, began growing Microgreens in 1995 and is now one of the larger growers in the country. Located in San Diego on two acres with seven climate controlled warehouses, Fresh Origins grows, harvests and ships a large assortment of fresh MicroGreens to restaurants and distributors year round.
Using seed stock harvested from around the world, Fresh Origins Microgreens are grown in peat moss and harvested within a few days after sprouting. The harvest yields but one cut and replanting is constant. When the growing cycle is complete, the special care that is taken and attention to detail in harvesting and packaging results in extraordinary quality and a longer shelf life than similar products.
