Hidatsu Red

Hidatsu Red


The beans originated from the Hidatsu Tribe who raised beans in the Missouri River Valley or North Dakota. In 2005, they were added to Slow Food USA's Ark of Taste List as being close to extinct in heritage form until Chip Morris began growing them year after year to gain seed stock until there was enough quality seed to plant and harvest. The Hidatsu Red beans are dark red seeds that taste similar to a kidney bean with a bit of a nutty flavor.
