While we wait for the local harvest of some of spring's treasures like fava beans and English peas, we thought we would bring to your attention a relatively new product. Black garlic is sweet meets savory, a perfect mix of molasses-like richness and tangy garlic undertones. It has a tender, almost jelly-like texture with a melt-in-your-mouth consistency similar to a soft dried fruit. It's as delicious as it is unique. The garlic is fermented at low temperatures for over a month long period and is produced in Hayward, CA, which happens to be the only manufacturer of Black Garlic in the U.S.. Black Garlic is a traditional ingredient in Asian cuisine but its popularity in the U.S. is credited by the use of prominent chefs in the Bay Area. It is now considered a staple of modern cuisine and can be seen on menus in culinary progressive cities such as Chicago and New York City.
Vanilla and Extracts
Produce Express is pleased to offer an ever expanding list of products to supplement our inventory of fruits and vegetables. This week we are featuring vanilla products and natural extracts from Lochhead Mfg. Co. in Paso Robles, CA. Lochhead is a fourth generation family operation recognized as one of the world's foremost producers and manufacturers of vanilla and has been involved in all facets of growing, harvesting and curing of vanilla beans since 1918. Lochhead follows the most stringent methods to produce their vanilla products. They use no heat in the process of making vanilla extract, but rather a cold method of extraction to obtain the most delicate and rich aroma from the beans. In addition to the vanilla extract, we are now stocking maple, almond, lemon and orange extracts for use in pastries, ice cream, confections, candy and desserts. The citrus extracts are terpeneless, meaning all of the bitter, undesirable flavor elements are removed by distillation, producing a clean and pure citrus flavor.
