About Dutch-Processed: Also known as Alkalized cocoa powder which means it has been treated with an alkali to neutralize its acidic nature. Because it is neutral and therefore will not react with baking soda, it should be used in recipes calling for baking powder; unless there are other acidic ingredients in sufficient quantities used; in order for proper leavening to occur.

Natural Unsweetened Cocoa Powder will taste very bitter and produces a deep chocolate flavor your baked goods. The intense flavor makes it a good choice for brownies, cookies and some chocolate cakes. When natural cocoa (acidic) is used in recipes calling for baking soda (alkali), it creates a leavening action that causes the batter to rise when it is introduced to heat (oven). Popular brands are Hershey\'s, Ghirardelli, and Scharffen Berger.

Please note: Due to the differences between natural and Dutch-processed cocoa powders, it is not advisable to substitute one for the other in recipes as it may cause leavening issues.
