Asiago Cheese

Asiago Cheese


A hard, aged cheese that is sweet, slightly tangy and pleasant with a clean finish. It has a sharp flavor that is similar to Parmesan combined with a Cheddar. 

Asiago is an Italian cow's milk cheese. It's texture varies according to its aging with fresh asiago being smooth and more aged versions taking on a more crumbly texture.


 Asiago makes an excellent grating cheese over pastas, salads, soups, appetizers, and gravies.


Asiago has a protected designation of origin which means "authentic" Asiago must be produced around the alpine area of the Asiago Plateau, in the regions of Veneto and Trentino-Alto Adige. In the United States, different techniques and cultures are used that produce a very similar cheese but with a different taste. The most common of these is Wisconsin cheese, a mezzano cheese with a sharper flavor than its Italian version.
