Bay Blue is a rustic-style blue cheese reminiscent of Stilton. It is known for its mellow flavor and sweet, salted-caramel finish. It has a fudge-like texture with a natural rind and made with pasteurized milk. Aged 90 days.

A great cheese-course blue and also works well in salads, creamy dressings, dips, sauces and appetizers. Bay Blue compliments mushrooms beautifully and makes a delicious after-dinner cheese, especially when paired with a Vintage Port or Barrel-Aged Scotch.
