Tome - Laura Chenel
Tome has a pale ivory color and firm texture similar to aged Cheddar or Parmigiano Reggiano. This French Tome style cheese exudes balanced notes of sweet caramel, salt, and fresh milk. Entirely hand-made, fresh goat curd is wrapped in cheese cloth and formed into 3-4 pound wheels then aged for 8-12 months.

Tome has the perfect texture for melting, crumbling, and snacking. Try it shaved onto salads and pasta, or shred it on pizza and a a variety of dishes. Tome pairs beautifully with a nice glass of Pinot Noir.
Inspired to make a French Tome style cheese, Laura Chenel sought advice from neighbor Ignacio "Ig" Vella, the creator of the iconic Dry Jack.
Laura Chenel began farming goats in Sonoma County in the 1970's. In 1979, she went to France to learn from master cheesemakers. When returned, she began producing and selling her first cheeses. One of her first customers was Chef Alice Waters, owner of Chez Panisse restaurant in Berkley, CA. Alice Waters fell in love with Laura's cheeses and placed a standing order of 50 pounds per week. Laura Chenel chevre was the inspiration for the iconic "California Goat Cheese Salad." The rest is history.
