Although it can be found in markets throughout the year, it is in season from the middle of winter through the beginning of spring when it has a sweeter taste and is more widely available.
Kale is a member of the cabbage family, cousin to broccoli, collards and Brussels sprouts. Mature Kale is bold and peppery with a chewy texture, so it's rarely served raw.
Medium size, thick, chewy leaves are rich in color, splotched with red and purple, and toothed with red midribs, with a mildly sweet, earthy, cabbage flavor.
