Bean - Purple Hull Black-Eyed Peas
Purple Hull peas are a staple in Southern Cuisine. The common perception is that Purple Hull peas are creamier, smoother and more delicious than their cousin, black-eyed peas.
Use in recipes calling for black-eyed peas. Purple Hull peas are exceptional when seasoned with pork fat in greens, soups, ragouts, and vegetable side dishes.
The rich raised these peas for livestock back in the times of slavery, but would throw some to the slaves (or poor whites). So, they became soul food. The poor would spice them up with leftover pork fat, etc. and make them delicious.
