Description

Bok choy, is classified as a cabbage. Nonetheless, bok choy bears little resemblance to the round European cabbages found in western markets, or to Napa Cabbage for that matter. Its white stalks resemble celery without the stringiness, while the dark green, flat, crinkly leaves of the most common variety share a similar appearance to Swiss chard.

Entirely edible, the leaves are the most tender and mild part of the plant. The stalks are firm and succulent with a mildly sweet flavor.

History

Bok choy is native to China, originally confined to the Yangtze River Delta. Its name is derived from the Chinese name for "soup spoon" because of the shape of its leaves.
