Chives are the smallest member of the onion family with a much more subtle and delicate flavor because they contain less sulfur. A necessary ingredient in fines herbs (chervil, chives, tarragon, parsley)
Chives are best when added to dishes at the last minute since long cooking diminishes their delicate flavor. Chive flowers make an excellent garnish and salad ingredient.
