Kale is a member of the cabbage family, cousin to broccoli, collards and Brussels sprouts. Mature Kale is bold and peppery with a chewy texture, so it's rarely served raw. However, Baby Kale is very mild with a flavor similar to baby arugula, but less assertive. Baby Kale leaves are sturdier than many other baby lettuces and can stand up to a wide array of ingredients and bolder flavors without being overwhelmed.

Unlike mature kale, baby kale leaves are tender and flavorful enough to be used raw in salad. They don't have thick central stalks to trim away, nor do they require blanching. Baby Kale cooks quickly in much the same manner as baby spinach and can be used in cooked dishes like pasta, frittatas, stir fries and soups.
