Pepper - Anaheim / Long Green
Anaheim peppers are long, somewhat round tapered peppers, usually green in color with mild heat.
Anaheim chiles may be used in any number of dishes that call for a mild chile and stuffed for use in chile rellenos, though the poblano pepper is more commonly used. Roast and peel anaheims then chop or purees to add to stews, soups, salsas and sauces.
Anaheim is a generic name for any number of long, green chiles, originally grown in New Mexico, then later in Southern California, around Anaheim. When dried, they are known as chile Colorado.
