Puntarelle is a long, spiky Italian chicory, and is related to radicchio and endive. Its mild, bitter flavor blends the spiciness of arugula with the sweetness of fennel, just the right kick to jumpstart a salad.
Tasty raw or cooked, cooking mellows puntarelle's unusual flavor, so the shoots and leaves are most often served raw in salad, particularly a salad with a rich, powerful anchovy dressing that makes the faint bitterness seem almost sweet.
Once virtually only found in Italy, this vegetable has made its way to other parts of the world and provides a much sought after taste of the Mediterranean.
