Green Flageolet Beans
Small pale green bean that is tender and sweet. It holds shape well when cooked and is used often in French cooking. It can be baked or used in soup, salads, or with pasta. It is often used in classic cassoulets and is excellent with meats. Prized by many chefs, it will cook down into a creamy white sauce.
The Green Flageolet is called the "Roll Royce of Beans". It originated in the Americas but was developed in France in the 1800's.
